I have an unhealthy obsession with buffalo anything. Like for real. I think it's because it was literally the first spicy thing that I ever liked.
So here I am a freshman in college, my tastebuds aren't fully developed yet and I'm out at a sports bar with a ton of guys... because college... Well they've gone and ordered a massive plate of buffalo wings. Now I was the kind of kid who would smell spice and start to sweat. I blame my dad for that. He still turns neon red whenever he takes a bite of spice. Buffalo wings? With all those little flame symbols and warnings? Yeah that scared the crap out of me.
But again. College. And cute boys.
Not wanting to miss out, I tentatively took a teeny tiny bite of a wing. Ok. This isn't too bad. One more bite? Oh. Yeah. There's the spice. Where's the water? Blue cheese? BLUE CHEESE. HALLELUJAH! Oh wait... this tastes... this tastes good. I think I could be into this...
Right then and there I made the decision - spice be damned! I will overcome! Since then I've probably gone from a 2 to a 6 on the spice scale. Hot sauce? Hell yeah! Dynamite challenge at Jitlada? Death.
Well now I always have a bottle of Frank's red hot tucked somewhere in the fridge because of all the spicy flavors out there, buffalo is my calling card. And I could eat it on everything. Even ice cream. Yeah. Try that. It's actually pretty darn good. Anyway - you're here because you saw flatbread. Didn't know you were going to get a rambling story about my college tastebud insecurities, huh?
Preheat your oven to 350ºF. Throw your bread onto some tinfoil or something so it's super easy to clean up. Spread the garlic right on top and then evenly top the bread with shredded cheese. Alternate placing blue cheese and chicken all over the flatbread and then drizzle with Frank's. Bake for 10 to 15 minutes or until the cheese is nice and melted and bubbly and the chicken is warm. Garnish with chives and ENJOY!

- 1 pita bread or nan bread, like from La Brea Bakery
- 1 tsp. garlic, crushed
- 1/4 cup mozzarella, shredded
- 2 tbsp. blue cheese, cubed
- 1/4 cup chicken
- 1 tbsp. Frank's red hot sauce
- 1 tsp. chives, diced
