I've heard all about "The Rolling Stone" ever since it slipped off one of Chef Dakota Weiss's greased up skillets - but somehow had managed to never make it to brunch at Estrella until now. I mean - sure, avocado, eggs, bacon... what's there not to love?

I felt like I understood what it was. I appreciated the concept - but I got it.

I didn't. I didn't fully understand the absolute joy that is this dish, and I have to say while the actual Rolling Stone itself is pretty stellar, what honestly sold it for me was the pairing with crumbled Queso Fresco, the tang from the dressing, and the fresh bite of ripe tomato. It's a dish that really requires a little bit of everything in one bite and BOY when you take that bite. It's absolute magic!

Don't be fooled by all those "tasty styled" impersonator videos out there. This is for sure something you have to have in person - at least once in your life.
